Prosciutto Roasted Salmon Fillet & Grilled AsparagusIngredients:160g Salmon Fillet 1 Slice Prosciutto 6 Stems Asparagus 25g Buffalo Mozzarella Pinch Saffron 20g Butter 3 Cherry Tomatoes Salt & Pepper Method: 1 Wrap the Salmon with the Prosciutto 2 Pan sear the wrapped Salmon until cooked to your preference 3 Pan roast the Cherry Tomatoes in olive oil 4 Grill the asparagus until tender, place on the serving plate, top with Mozzarella and grill until golden 5 In a separate pan, simmer the saffron in the butter until golden in colour 6 Place the Salmon on top of the asparagus and mozzarella, pour over the saffron butter, add the roasted cherry tomatoes and garnish with a little Italian parsley. |
